JoAnne’s Salmon
INGREDIENTS:
Small amount olive oil
Fresh minced garlic
Filet of salmon
Basil
¾ Cup white wine
2 Lemons
Teriyaki sauce
DIRECTIONS:
- Place a thin layer of olive oil in frying pan, heat on (med).
- Rub freshly minced garlic on salmon filet.
- Place salmon skin side down in pan, and turn heat to high.
- Hand grind basil over salmon.
- Cook for about 2 minutes.
- Flip salmon, and cook for another 2 minutes.
- Flip salmon back to skin-side down.
- Remove from heat, and add wine.
- Hand squeeze whole lemon over salmon.
- Return to heat, set at low/med.
- Cover, and simmer for 10 minutes.
- Remove lid, add thin layer of teriyaki sauce to filet.
- Return lid, and simmer for an additional 10 minutes, then enjoy!
Goes well with steamed asparagus and wild rice.
