Waffle Cookies

INGREDIENTS:
3 Sticks real butter
5 Eggs
2.5 Cups sugar
1 Tablespoon vanilla
¼ Cup Rum (Bacardi Gold, or whatever)
3.5 Cups flour

DIRECTIONS:

  1. Beat butter until creamy.
  2. Add eggs, and beat until creamy.
  3. Add sugar, and beat some more.
  4. Add vanilla and rum, beat more.
  5. Add flour ½ cup at a time while beating
  6. After well beaten, cool in fridge for at least 6-8 hours (can be months, if desired)
  7. Heat waffle iron (preferably small grid).
  8. Add 2 tablespoons mix in middle of hot waffle iron square, close lid, cook for 2 minutes.
  9. Remove with fork, and enjoy!
