Waffle Cookies
INGREDIENTS:
3 Sticks real butter
5 Eggs
2.5 Cups sugar
1 Tablespoon vanilla
¼ Cup Rum (Bacardi Gold, or whatever)
3.5 Cups flour
DIRECTIONS:
- Beat butter until creamy.
- Add eggs, and beat until creamy.
- Add sugar, and beat some more.
- Add vanilla and rum, beat more.
- Add flour ½ cup at a time while beating
- After well beaten, cool in fridge for at least 6-8 hours (can be months, if desired)
- Heat waffle iron (preferably small grid).
- Add 2 tablespoons mix in middle of hot waffle iron square, close lid, cook for 2 minutes.
- Remove with fork, and enjoy!
